I made this Chequered cake for a private class a few months ago.  It is fun and easy and somehow it makes everyone excited when you cut it.  So we will bake and decorate;

Pineapple Tart Class

Saturday October 15th 10 to 1 pm


A favorite of every festive in Malaysia. Learn to make two types of pineapple tarts.

You will learn two types of pastries and the jam of course.

  3. Pineapple Jam


This is a hands on class, please bring containers to take home your cookies

Murukus and Sweet Spicy Cornflake Class

A lot of people have been grumbling about the prices of Murukku. So I think we should learn it.

Puff Pastry Class

October 16th 2.30 to 5.30 pm

December 2015 Cooking and Baking Classes

This month will be a very heavy month with work for my big my KK Restaurant project.  Next week I have my young chefs coming in for training.  A Motley Crew of Cooks who I handpicked from many candidates.   So this month after nearly 9 years of Christmas classes, I can only hold two or three sessions.

The first will be my Fruit Cake Class which I will hold twice and a Roast Turkey Class just a week or so before Christmas.

Aunty Nan C’s 68th Birthday Cake 10 / 10 /10

Well the 10 / 10/ 10 comes but once in a blue moon and so this cake and cupcakes were something that suddenly came to my mind with the help of my friend Hafiq and Hanifi.  I think by far this was the hardest cupcakes I have done simply because we made everything by hand, the dots and icing, the fondant. Everything was by hand except for the little red heart which given the chance we would have made as well.

This is Hafiq’s and Hanifi’s first foray into cake decorating. And I must say they were extremely good.  Here is what we made.

This is the first time I also tried cake painting, and after more then 20 years of not holding a paintbrush to actually paint, I finally overcame the fear and did it. Well I did the

words, and Hanifi did the rest, but now I have the guts to do so and will conduct a class on cake painting real soon. I suddenly feel I can do it so let me do it a few more times. Then I will teach it at class.

Initially we were all worried because once painted if things go wrong we had all of a few hours to have a back up plan, but once we got started, it was really a redeeming feeling.

from the way flowers are painted. When I do my flower making class, painting method is different. Well its all a learning process and now I want to paint cakes.

I am and so were the boys, really excited with the end product.  The effect was way above my expectations, and I believe this is excellent team work.  And it really was because the cupcakes took nearly 8 hours to finish and that two with two people doing it and the cake took a total 7 hours to finish with three sets of hands. And the result!

Dad’s 70th Birthday Cake

Well last week as mentioned a gazillion times was hectic and one of the reasons was the cake which I had to make a tiny bit more special then usual because it was for my dad.  So here it is, it is once again a rush job because I had so much to do.

It is really difficult to make a cake for a guy, worst still when it’s your dad who will say anything and everything is ok.  That’s the worst kind. The design actually came quite by accident, I was going to write some soppy message and suddenly I shaped the tie by accident and the little blob of icing you seen between the words ,well that was a boo boo I made with the words, so I had to find a way to get rid of it.  Everyone thought it was quite pretty.

So the easiest was cupcakes and one not too big birthday cake.  All together there was 10 kilos of Sujee Cake and about 3 kilos of icing, and of course those sweet maraschino cherries which I suddenly decided to use because Sujee Cake is rich on its own, so I thought a dollop of icing was more then enough or it would be too heavy.

The best part of it all was not having to serve anyone that night. After we sang happy birthday, I told everyone to help themselves to a cake and GO HOME!… ok ok I did not say Go Home!… but it was nice, everyone took a cake and ate it and some wrapped it up in serviettes and took it home. No stress for me and the girls to pack cake and cut cake and serve it.

Suji Cake Day

Today I had orders for Suji Cakes and Suji Cupcakes. For those who don’t

know what Suji or Sujee Cakes are, it is an old fashioned cake usually served at celebrations like weddings, big birthdays, and Christmas.

While this cake in Malaysia seems to be a fascination of the Eurasians and the Cristangs in Malacca, this cake actually originated from Sri Lanka or Ceylon back then. Now however over the years I notice a rise in popularity of the Suji cake amongst the Chinese as well.  And I must say this cake is eaten with a lot of class as well.  Come to think of  it, most of my clients are Chinese as well.

This cake is usually served at important birthdays, Christmas and weddings. Somehow though, I have a number of clients who order it all year round.
This cake is one that is an acquired  taste and often it is not a cake for kids and younger people though that does not stop parents and adults getting it for them. I was one of those victims many moons ago. I never liked the cake till a few years ago, so I guess it comes with Birthday. Parents should realize that Suji Cake at that age is totally uncool!

Also most Caucasians or Westerners for that matter don’t seem to taste any difference in this cake and consider it  just another Butter Cake.  I always tell them try eating a whole Butter Cake and 5 pieces of Suji Cake and see which yields the most weight gain.

Its richness lies in the usage of mainly egg yolks and with Ground Almonds and at special occasions when it is coated with Fondant and Marzipan or sometimes even Butter Icing, it is worth its weight in folds! The amount of Folds we will find on our bodies after consuming it. But still, it is a firm favorite and no one can take this away from us Malaysians.

Suji Cupcakes

Cupcakes, and it is just the right size and totally no mess when serving. Suji Cupcakes just needs a tiny bit of decoration unlike conventional cupcakes. This is

because of its richness. This cake is not for the weight conscious. I’ve had customers who have totally banished this cake but then still order it once a month pretending they have forgotten the banishment.

This cake is highly priced because it is made with ground almonds, and it is a lot of work as there are different stages before it is mixed up and baked.  It is also a very temperamental cake so it has to me made with a lot of patience and love.  Never rush when you make this cake because it will be a disaster, Trust me I have had many a disasters with this and with its expensive ingredients; this will be a total waste.

Wedding Cupcakes and the Matching Topper

I made this cake for a friend of mine who just got married about three weeks ago. At first I was a little bit apprehensive about the flowers she wanted but in the end I had no choice because she insisted.

The flowers look like hybrids of flowers we drew as kids. But still I think its fun to do stuff like that as part of your wedding cake and break from all traditions. You Go Joceline!

I am also lucky she took photos because I clearly forgot and when I went to assemble the cake, we could not set it up because of the heat. So the restaurant assembled everything for me in the end. Still I thought it came out nice.

These were photographed by a photographer. Wonder if they could have done a better job with the other cupcakes eh Karen? What do you think? This photo here to me just adds romanticism to an otherwise animated cupcake.

Cupcakes Galore

Cupcake making started all by accident. I never thought I had it in me to make cupcakes till one day I was forced to but a friend. And then it took off.

I made a batch of 100 cupcakes for this little girl on Saturday, and although it was a big rush, the oohhs and ahhhs I got and a couple of wows made it all worth it.

I like making cupcakes that make people smile and think happy thoughts. The kind of cupcakes that brings out the child in us and it has happened a few times when older people come for a party and they see the cupcakes arranged on the table, you see that little child in their eyes and the excitement of going back to their childhood.

Cupcake making is not something you can rush, while yes you may rush but at the back of your head you need to plan what you want to do and should already have a rough idea.  I do have moments when I have Cupcake Making Block, and then you will see a totally different side of my piping capabilities. When I am not rushed and am in a happy mood, it is also different.

Decorating cupcakes too does not require much skill, it requires you to bring out the inner child in you.  The inner child we all wish to forget because we are so grown up. Sometimes it is this inner child that we choose to hide is what hinders our creative juices.  I tell that to all my students when they come to class.  I never teach them particular patterns, I teach them to let out what’s inside. And in the end it works out fine and you see a whole room full of grownups having a good happy time making cupcakes.
