April Baking and Cooking Classes 2015

Hainanese Chicken Rice

Saturday April 4th 10 to 1 pm

Learn to make Hainanese Chicken Rice. You will learn to prepare;

  1. Silken Chicken
  2. Heong Fun
  3. Chilly Sauce
  4. Ginger Garlic Oil
  5. Sweet Soy

Ways with Eggs

Saturday April 4th 2.30 to 5.00

A simple class that is often requested and I always seem to ignore. This changed when I did a few private classes and realized many didn’t know how to do these eggs properly.  Eggs are Easy and Eggs can be eaten for Breakfast, Lunch and Tea and Dinner if you wish!

  1. Scrambled Eggs
  2. Omelet – A Breakfast Omelet
  3. Baked Eggs – Seems to be a craze as a One-Bowl-Wonder!
  4. Poached Eggs – the hardest to do

This is a fully hands on session.  Each student will have their own set of eggs to work with.

Soup Days

Sunday April 5th 2.30 to 5.30 pm

There are days when I just crave English style soups and broths.  Here are my favorite easy soups.

  1. Scotch Broth
  2. Potato and Leek Soup
  3. Old Style English Watercress Soup

Five Layered Strawberry Cake

Saturday April 11th 10 to 1 pm

This was a challenge. My friend gave me a photo of a very In Fashion now cake and I did it.  You will learn to make;

  1. Strawberry Cake – using fresh strawberries
  2. Cream Cheese Topping – This is not so easy as I found out Twice… once because I was texting and the other, I was trying to multitask. Full concentration is needed.
  3. Assembling the cake

Puff Pastry Class

Sunday April 12th 2.30 to 5.30

Learn to make puff pastry from scratch.  You will learn;

  3. Spinach and Cheese Puffs
  4. Spicy Tuna Puffs

Ways with Fish

Saturday April 18th 10 to 1 pm

I’m fussy when it comes to fish, here are some of the fishy stuff that I like.

Tiramisu oh Tiramisu

Saturday April 18th 2.30 to 5.30

Tiramisu is always an expensive favorite and we often feel we never get enough of it when we leave a restaurant.  Let’s change that.  Learn to make;

  2. Mixed Berry Tiramisu

Chicken Curry Bread

Sunday April 19th 10 to 1 pm

Learn to make a Malaysian only favorite.  People still line up for it each day.  You will learn;

A day of all things English. These are ideal for breakfast or tea, or be like me… anytime of the day!

Saturday April 25th 10 to 1 pm

Learn to make Steamed Pao and Siew Pao. Learn to make the two different Paos from scratch.

French Macarons

Learn to make the little morsels that everyone seems to either hate or love.  You will learn the fundamentals of making;

Japanese Bread

Sunday April 26th 10 to 1 pm

This will always be my most favorite bread class.  Hard work but it always pays off in the end.  You will learn;

Old Fashioned Butter Cake

Sunday April 26th 2.30 to 5.30

Let’s make Old Fashioned Butter Cake and Butter Icing

You will also learn to do some basic decoration like spreading icing, piping the sides and covering borders on your own cake.

This is a hands on session. The old fashion way to make this is by using a spoon.  So we will be doing it the traditional way.

Japanese Soft Bread

Saturday November 8th 1.30 to 5.30 pm

Everyone has been asking me to do this for years and I always didn’t want to because of various reasons.  Well this recipe I have is bothersome and a lot of work but it is half the time of the original recipe I had and I don’t even have to put in softeners and all.

Japanese Pick Pick Food Class

Sunday November 9th 2.30 to 5.30 pm

These are my simple favorite starters when I go for Japanese.  You will learn to make;

  1. Tamagoyaki – Egg Roll or Rolled Omelet
  2. Harumaki – Japanese Spring Rolls
  3. Agedashi Tofu
  4. Sauces

Eurasian Cooking Class

Saturday November 15th 2.30 to 5.30

As you know I am part Eurasian, hence where the craziness and zaniness comes from.  Eurasian style of cooking is different from home to home depending on the mix of parentage.  I’m a big confusement, but these are the foods I grew up with.

  1. Eurasian Chicken Pie – A must for Christmas or any celebration
  2. Dutch Chicken Curry
  3. Ayam Pong Teh

Roasted Chicken is Comfort Food.  It is easy to prepare and no mess.  You will learn to make;

Dessert Dessert 1 –  Poached Pear and Brown Butter Tart

Saturday November 22nd 2.30 to 5.30

I’ve always loved poached pears but seldom had it in a tart.  I actually didn’t even think it was possible till I tasted this. Every part of this recipe is a dessert of its own and can be used for other things.

You will learn;

  4. Assembling the Tart

Fruit Cake 1

Sunday November 23rd 2.30 to 5.30

It’s my favorite time of year when we make Christmas Cake. You will learn to make two types of fruit cakes.

  1. Easy Rich Fruit Cake – My favorite
  2. Semolina Fruit Cake (Sri Lankan Fruit Cake)

Roasted Turkey Meal

Saturday November 29th 10 to 1pm

It’s the yearly Turkey Class; learn to make my moist turkey and all the trimmings and accompaniments that go with it.

What is life without pineapple tarts.  Learn to make two types of pineapple tarts.

You will learn two types of pastries and the jam of course.

  2. Rolled Pineapple Tart
  3. Pineapple Jam

This is a hands on class, please bring containers to take home your cookies

Mille Crepe

The art of Mille Crepe – Learn to make Mille Crepe from scratch. You will learn to make the crepes, the mille feuille (Cream) and assemble the crepe and take your share home.

Choux Paste Class

Homemade cream puffs are a true delight. Let’s learn to make several types of variations using choux paste. You will learn to make;

Class will commence once there are 6 students. This is a hands on session, so please dress comfortably, and bring containers.

Bread and Scone Class

I had a Bread and Scone Class a few weeks ago and I had three happy, tough ladies who worked with a lot of zest and power and after all their hard work, we had really nice breads to sample and they took home some too.  I like to give my students a freehand on what they want to do, because at times in the chaos of telling everyone what to do I can also forget certain things and to me the result when one is able to explore their own creativity is truly something else.

A Dainty Jessica

My three ladies for the class was Jenny, Jessica and May who is my regular.  May has been to many of my classes and so she knows how I do things and so like all the rest she knows she has to work in the class. It was a fully hands on class, so everyone worked from start to end.

We made Olive and Sun Dried Tomato Bread, Poppy and Melon Seed Bread And Scones.  So after all the hard work of kneading and forming dough, everyone say down and had the different breads with butter and like proper English ladies, they had Hot Scones with butter and my Rose Petal Jam.  I was too lazy to beat the cream that afternoon.

We made the Poppy and Melon Seed Bread into different designs and it ended up being very pretty.

Very photogenic breads indeed.
