Learn to make Hainanese Chicken Rice. You will learn to prepare;

Ways with Eggs

Saturday April 4th 2.30 to 5.00

A simple class that is often requested and I always seem to ignore. This changed when I did a few private classes and realized many didn’t know how to do these eggs properly.  Eggs are Easy and Eggs can be eaten for Breakfast, Lunch and Tea and Dinner if you wish!

  1. Scrambled Eggs
  2. Omelet – A Breakfast Omelet
  3. Baked Eggs – Seems to be a craze as a One-Bowl-Wonder!
  4. Poached Eggs – the hardest to do

This is a fully hands on session.  Each student will have their own set of eggs to work with.

Soup Days

Sunday April 5th 2.30 to 5.30 pm

There are days when I just crave English style soups and broths.  Here are my favorite easy soups.

Five Layered Strawberry Cake

Saturday April 11th 10 to 1 pm

This was a challenge. My friend gave me a photo of a very In Fashion now cake and I did it.  You will learn to make;

  1. Strawberry Cake – using fresh strawberries
  2. Cream Cheese Topping – This is not so easy as I found out Twice… once because I was texting and the other, I was trying to multitask. Full concentration is needed.

I’m fussy when it comes to fish, here are some of the fishy stuff that I like.

Tiramisu is always an expensive favorite and we often feel we never get enough of it when we leave a restaurant.  Let’s change that.  Learn to make;

Chicken Curry Bread

Learn to make a Malaysian only favorite.  People still line up for it each day.  You will learn;

This will always be my most favorite bread class.  Hard work but it always pays off in the end.  You will learn;

Old Fashioned Butter Cake

Sunday April 26th 2.30 to 5.30

Let’s make Old Fashioned Butter Cake and Butter Icing

You will also learn to do some basic decoration like spreading icing, piping the sides and covering borders on your own cake.

This is a hands on session. The old fashion way to make this is by using a spoon.  So we will be doing it the traditional way.

I had Chicken Curry Bread (not chicken curried bread) one night when my brother brought it from Port Dickson. And at $40 a pop, I think you deserve to learn it and that too after you wait an hour in line.
That’s why you’re learning it today. You will also learn to make my favorite kind of Pizza, so it is a class of east and west!

I used to think Eggless cakes were a pain in the neck, so now I have created some easy ones that will always come out without much fear. You will learn to make;

Children’s Holiday Class
Pizza and Calzone Class
Thursday September 18th 2.30 to 4.30

Class for children aged 8 to 14. Your kids will learn to make Pizza and Calzone along with two toppings.
They will learn:

1. Pizza Dough
2. Calzone
3. Creamy Chicken and Mushroom
4. Uncooked Tomato Topping

Old Fashioned Butter Cake and Butter Icing Class
Saturday September 20th 10 to1 pm

You will learn to make the Old Fashioned Butter Cake by hand and then do basic decoration with Old Fashioned Butter Icing. Each person will get a butter cake fully iced to take home.

This is a hands on class.

Malay Curries
Saturday September 20th 2.30 to 5.30

My favorite Malay curries, something I have not tackled as a class but often serve it to my customers.

Butterless Cakes – Kasutera Cake Day
Sunday September 21st 2.30 to 5.30

As much as I love buttery cakes, this very old cake from Japan seems to be the rage in a few hotels and top notch bakeries around town. Let’s make the;

1. Nagasaki Castella Cake – a cake from the Portuguese that entered into Japan hundreds of years ago
2. Matcha Kasutera Cake
Both have no butter or oil.

My First Hand Bag Cake

The last two days have been rather daunting. I took an order that I was quite close to giving up because I had never done this sort of cake before. And after a rather hectic and stressful week last week and the weekend as well I might add, I thought enough was enough, but since I took the order and it was for one of my best clients I could not day no. So I made my first HANDBAG CAKE!!!!!

Constructing it was bad enough. I did look around on the internet and it was all

stuff that would take days to do and I had Monday to bake the cakes and Tuesday to ice it, so there was no mucking around and thinking of anything fancy mancy! I had to make it high and so I had to make sure the cake was “strong” enough to take the other cakes weight. I could have used fruit cake, but that would be too expensive and not many people like fruit cake although Farah does like it I know. So I piled on 3 layers of Nutty Carrot Cake and on top I put an Orange Butter Cake, so cake alone it was 5 kilos already. I sandwiched it with cream cheese frosting and then covered it with butter icing, and then proceeded to cover it with fondant. And last night, I swear the cake looked like a something from Hansel and Gretel gone wrong. It was hideous.

I gave up at 10.30 pm and went to bed. And trust me it was not easy going to bed with things on your mind.

I did have things in mind the next morning, that I thought thru the last night and I actually did an Emmanuel Stroobant and drew everything on a piece of paper, step by step, because this is almost like constructing the real thing.

So, I started again, with paper in hand and adding bits and pieces and three hours later. This is my cake. It does need a little bit of changes but for my first time, I think I can do it better next time. I chose not to use any designer names or logos because to me without making a big thing about it, it is an infringement of a brand, so I will not do such things as I am very against things like this. So this is Nicholas Pillai Design.

now Mrs Elaine Kathleen Foenander watches over me. Even when I was young and quite hopeless she always gave me extra and taught me more then she did with the other ladies, I never knew why she’d take the pains to do so for this big fat kid who asked a lot of questions. So this goes out to Mrs Foenander! It’s not the best, but it will get better…..
