Butterless Cakes – Kasutera Cake or Nagasaki Castella Cake 

Saturday August 2nd 10 to 1 pm

As much as I love buttery cakes, this very old cake from Japan seems to be the rage in a few hotels and top notch bakeries around town.  Let’s make the;

  1. Nagasaki Castella Cake – a cake from the Portuguese that entered into Japan hundreds of years ago
  2. Matcha Castella Cake

Both have no butter or oil.

Thosai Idly Class

Saturday August 2nd 2.30 to 5.30pm

 Learn to make Indian Breakfast delights. You will learn to make;

 

  1. Idly

Chicken Curry Bread and a Margarita Pizza

Chicken Curried Bun

I had Chicken Curry Bread (not chicken curried bread) one night when my brother brought it from Port Dickson.  I turned my nose to it.  But while watching my Korean Soapies, I got hungry so I decided to try it… and low and behold!!! That’s why you’re learning it today.  You will also learn to make my favorite kind of Pizza, so it is a class of east and west!

  1. Chicken Curry
  2. Bread Dough
  3. Pizza Dough
  4. Margarita Topping

PS I will not be wrapping the Chicken Curry in Foil as shown, It will be something else with the chicken inside encased in foil.  So the chicken will not be cooking in the foil.

Rainbow Mille Crepe

Learn the art of Rainbow Mille Crepe.

Learn to make Rainbow Mille Crepe from scratch. You will learn to make the crepes, the mille feuille (Cream) and assemble the crepe and take your share home.

 

Price Per Person: $100

Class will commence once there are 6 students.  This is a hands on session so please dress comfortably and bring a container.

 

Mooncake Class 1

Saturday 16th August 10 to 1 pm

A most asked for class all because the prices of mooncakes have gone up tremendously.

 

  1. Traditional Mooncake Skin
  2. Salted Egg Mooncake
  3. Fruit and Nut Moon Cake
  4. Lin Yoong Recipe will be provided and explained as it is too time consuming to do during class.

Mooncake Class 2 – Shanghai Mooncake

Sunday 17th August 10 to 1 pm

Another favorite this season, this fully hands on class will see you going home with several handmade mooncakes with different fillings. You will learn to prepare;

 

  1. Shanghai Mooncake Pastry
  2. Lotus Paste with Ginger and Cheese filling
  3. Coffee Lotus Paste
  4. Lin Yoong Recipe will be provided and explained as it is too time consuming to do during class.

Mooncake Class 3 – Teowchew Mooncake

Sunday 17th August 2.30 to 5.30

Learn to make this flaky mooncake.  You will learn to make;

 

  1. Teowchew Pastry
  2. Yam and Egg Yolk filling
  3. Gold Ingot
  4. Lin Yoong Recipe will be provided and explained as it is too time consuming to do during class

Dishes of Fishes – A Kerala Fish Curry Class

Saturday 23rd August 2.30 to 5.30

 

The way curry is prepared in Bangalore is rather different then how we prepare it here.  While we tend to use a lot of ingredients in copious amounts, they don’t and yet their curries are tasty and sits well on the palate.  You will learn;

 

  1. Fish Molee – Influenced by travelers from Malaya
  2. Red Fish Curry – no coconut milk
  3. Fish Curry – could not think of the name as the dialect did translate too well, but a different style of course.

Jelly Mooncake

Sunday August 24th 2 to 5.30

 

Jelly Mooncakes are not too bad. After turning my nose up to it all these years, thinking it was quite blasphemous, I have changed.  You will learn;

 

  1. Layered Agar Agar Mooncake
  2. Yam Agar Agar Mooncake

French Baguette Class

Saturday August 30th  2.30 to 5.30

Learn to make two types of French Bread.

You will learn to bake from scratch the French Method with the crusty finish and the American Method which is slightly crusty.

This is a fully hands on class.

  1. French Baguette (Banh Mi – Vietnamese)
  2. American Baguette

Sour Dough Yeast Free Breads

Sunday August 31st  2.30 to 5.30

Learn to make your own cultured rising agent.  This can be kept in the fridge for a long time and reused from time to time.  You will learn;

 

  1. Yeast Free Rising Agent
  2. Honey Loaf or Rolls
  3. Rustic Bread
  4. Charcoal Seed

 

Each person will get their yeast free culture to take home to practice. Class has to be booked at least two weeks in advance and fully paid so that each person can get their raising culture on the day.

Nasi Ulam Class

Monday September 1st 10 to 1 pm

Learn to prepare Nasi Ulam and some of its accompaniments.  You wil learn to make;

 

  1. Nasi Ulam
  2. Ayam Goreng Berempah
  3. Brinjal Paceri
  4. Fresh Sambal Belacan

This is probably the first time I have combined two months of classes. It is only because I will be away after the first weekend of May and will be back before the first weekend of June.

It’s been more than two months since I have eaten meat and so I’ve decided to hold a class on some of my vegetarian favorites. You will learn to prepare;
1. Spaghetti Kerabu
2. Vegetable Cutlets
3. Barley, Mushroom and Corn Salad
4. Carrot and Chickpea Salad
5. Home Made Cheese Crackers

Proceeds from this class will be donated to the Farm Animal Sanctuary, BRITAIN’S FIRST FARM ANIMAL SANCTUARY and last secure place for over 600 animals and birds rescued from abuse, neglect, slaughter and abandonment.

Old Fashioned Butter Cake and Butter Icing Class
Wednesday May 1st 2.30 to 5pm

Let’s make Old Fashioned Butter Cake and Butter Icing
You will also learn to do some basic decoration like spreading icing, piping the sides and covering borders on your own cake.

This is a hands on session, the old fashion way to make this is by using a spoon. So we will be doing it the old fashion traditional way.
